Spring BBQ Recipes: Pulled Pork, Baked Beans, Coleslaw

Who doesn’t love some good BBQ comfort food. The low and slow pulled pork, smothered in homemade barbecue sauce and the classic sides to go with it. This recipe cooked for about 7 hours, and you kind of just set is and forget it! The best part for me is that the ingredients are all things you may already have around the house and are very economical. Aside from shredding some cabbage (which you can totally buy pre-cut) everything is so no hassle and incredibly easy. 

The only thing you kind of have to hover over are the fritters, but they are so delicious and worth it. It’s an impressive crowd pleaser for brunch too that you can whip up last minuet. I definitely recommend these recipes for entertaining. The dinner recipes make HUGE batches so you can feed a lot of people, or if you prefer having leftovers for DAYS.

Pulled Pork Sandwiches

Ingredients

  • 1 tablespoon chile powder
  • 1 tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 pork shoulder roast (also called pork butt)
  • 4 onions, cut into halves
  • 1 bottle good barbecue sauce and good-quality hamburger rolls, for serving
  1. Stir together the brown sugar, chile powder, paprika, garlic powder, salt, black pepper and cayenne in a small bowl.
  2. Rub the mixture all over the pork shoulder. Wrap the pork in plastic wrap and refrigerate for several hours or preferably overnight.
  3. Preheat the oven to 300 degrees F.
  4. Place the pork in a large pot on a bed of the onion halves.
  5. Roast until fork-tender and falling apart, about 7 hours.
  6. Remove the pork from the pot and set it on a cutting board. Slice some of the onion.
  7. Place the pot on the stove over medium-high heat and add 1/2 to 1 cup of hot water.
  8. Scrape the pan to loosen up the bits and cook for 5 minutes to reduce. Pour in the barbecue sauce and stir to heat.
  9. Shred the meat with two forks, add the sliced onions to the pork and then toss in the barbecue sauce until it’s coated to your liking.
  10. Serve on hamburger rolls.

Quick and Easy Baked Beans

  1. Melt the butter in a saucepan and fry the bacon until almost cooked.
  2. Add the jalapenos, onions and bell peppers and saute for 5 minutes.
  3. Add the beans, mustard, barbecue sauce, ketchup and hot sauce, and heat through.

Coleslaw

Ingredients

  • 1/4 head purple cabbage, sliced thin

  • 2 cups whole milk, plus more for thinning

  • 1 cup mayonnaise

  • 2 tablespoons sugar

  • 4 teaspoons white vinegar

  • 2 teaspoons freshly ground black pepper

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon salt

  • 1/4 cup minced fresh parsley 

  1. Combine the carrots and the green and purple cabbage in a large bowl.
  2. In a separate bowl, mix together the milk, mayonnaise, sugar, vinegar, black pepper, cayenne and salt.
  3. Add more milk if you like the dressing a little thinner.
  4. Pour over the cabbage mixture and toss to combine.
  5. Add the parsley and toss again.

Apple Fritters

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup plus 3 tablespoons granulated sugar 
  • 2 1/4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 1/4 teaspoons salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tablespoons melted butter
  • 2 teaspoons vanilla extract
  • 2 Granny Smith apples, cored and cut into small dice
  • Powdered sugar, for dusting, optional
  • Serving suggestions: breakfast sausage and bacon 
  1. Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  2. In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt.
  3. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla.
  4. Gently fold the dry and wet ingredients together until just combined (do not over-mix).
  5. Fold in the apples, adding enough to make a very chunky batter.
  6. Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time.
  7. Fry until golden brown, 4 to 6 minutes.
  8. Remove and drain on paper towels.
  9. Dust generously with powdered sugar.
  10. Serve warm with sausage and bacon.

    Oh, all of these sound delicious! I haven’t made pulled pork before, so will have to save your recipe to try out. Also, there is nothing better than homemade coleslaw either, is there?
